For my husbands birthday he requested PO’BOYS. He loves these sandwiches & thanks to Guy Fieri’s amazing recipe he got what he wanted! 

This recipe is so easy to do but the flavors are amazing! I found the recipe in the June 2016 issue of Food Network Magazine. I am so glad I did too! So here is the recipe guys! 

1/2 c Mayo

2 Tbs minced pickles 

2 Tbs minced shallots

1/2 tsp hot sauce (Louisiana style is the best)

Dash salt & pepper

1 lb large shrimp cleaned & dried

2 tsp salt free Cajun seasoning 

2 TBs butter

4 rolls split

Shredded lettuce & tomatoes
For the sauce combine mayo, minced pickles, hot sauce & dash of salt & pepper. 

Season shrimp with Cajun seasoning & cook in butter in a non stick skillet until shrimp is pink. 

Toast rolls for about 5 mins. Spread mayo mixture on the rolls on each side & serve with shrimp, lettuce & tomatoes. 

Per request of my husband I fried up some jalapeños & add them to the sandwich too.

Quick healthy simple lunch…

Hey guys! 

So much has been going lately that I haven’t blogged in a while. This last week was my husbands birthday & I’ll be posting the food I made for him, but in the midst of busyness I made a yummy quick dish for my busy days. 

It’s only five ingredients that you need. Are you ready?! It’s butter, paprika, Milanese thin sliced steak, rice & pineapple. Easy right?

So I love pan frying my steak in butter with some paprika on it. It makes it so juicy and tender. It melts in your mouth. Makes my mouth water just thinking about it. After I pan fry my steak (which for this recipe I cubed up) I set the meat aside & pan fry the pineapple. I like to use brown rice & cook it in my rice cooker, but you can use White if you prefer. After cooking everything I mix it all together & there you go! 

It’s so easy to prepare that I make enough & can have it for lunch the next day & freeze it for the next week! You could also use chicken or shrimp with this! Hope you enjoy!  

Spaghetti Squash 

So with trying to cut gluten out I was trying to find different ways to make pasta besides just gluten free noodles. So I found squash noodles! 

I also got organic beef & cooked that & made a simple tomato sauce from tomatoes basil & a little garlic, sugar & salt. For the noodles I just sautéed them in a pan for a few mins. 

I wasn’t sure my husband was going to like it, but he enjoyed it so much he asked that I make it again! 

I got the noodles at Target & the organic ground beef at Winco. If you try it I hope you enjoy it!! Xo – C

Healthy snack bark

Hi guys! So it has been hot & humid here at our house & sometimes you don’t have much of an appetite due to the heat. So I decided to make one of our favorite snacks that’s healthier & delicious. 

I made bark, but not your average chocolate & nuts bark! I made mine with Greek yogurt, ( I use either honey or vanilla), nuts, dark chocolate chips & strawberries. You can switch it up & put what ever kind of fruit you want & toppings too!

I take a cookie sheet & line it with foil & spread the yogurt over in until it’s smooth & even. Then I add small bite size pieces of strawberries or other fruits. I sprinkle nuts & dark chocolate chips on there & then freeze it for a couple hours. 

After it’s frozen I take it out & break it into smaller pieces & then I just put it in a container & back in the freezer & there you go! You now have a nice healthier cool snack for summer! 

Gluten Free Chocolate Chip Banana Nut Bread

So recently I’ve found out that my body has a hard time tolerating Gluten so I’m exploring different recipes that are gluten free. It’s different because it’s a lifestyle change. I’m not very good with change, but I’m putting my best foot forward!

I love bread and one of my favorite breads is homemade banana nut bread with chocolate chips in it! I remember my mom making it as a kid for us. I loved the crunchy outside & the goey inside. So now I needed to figure out how to make it gluten free!

I actually found a recipe & it worked perfectly! It taste anazing too!

This recipe is so easy to follow & make. The only thing I did differently is I added slivered almonds to mine. If you try it I hope you enjoy it! Xo – C

Garlic Dijon Dressing

I love ranch, but sometimes I want something different. So I found this recipe & I tweaked to my taste. Also I don’t measure. I just mix the ingredients together until I like they way the flavors have blended together. So here’s what I used:

I use roasted garlic which I roast in a pan with butter & then in my little blender I add  Dijon mustard, olive oil & red wine vinegar. I add a sprinkle of sugar to take away the bite. I blend it until smooth & thick enough to stick to my salads nicely. No one wants a salad with a thin watery dressing!

I use it for steak salads or chicken salads. If you try it I hope you enjoy it! Xo – C

The perfect omelette 

I never knew that making an omelette could be so easy! I tried making one & succeeded ! Yay!! 

Here is what I did to make mine turn out! So I whisked two eggs with 2 table spoons water & a dash of salt & pepper. I don’t use salt normally when I cook because people usually add salt anyway & you don’t want your dish to be to salty. 

The I took my 7 inch pan & heated up a teaspoon of butter & as soon as it was hot enough I poured the eggs into the pan. As it cooked I pushed the sides down so that it cooked evenly. 

As soon as their was no liquid left in the middle of the eggs I added a half cup total of cheese & sausage. I didn’t want to over stuff my omelette. As soon as I filled it I flipped it in half & then plated it. 

I finished my omelette off with some chives on top. I’m not a big egg person, but this was amazing tasting! I’ll definitely be making it again! Xo – C
